For you morning people who like to hop out of bed and get cooking…this recipe is for you. At first glance it looks more complicated than our usual Oakland Veg easy-quick dishes, but don’t be fooled. That’s just the spice mix and you only have to make that the first time.
Tofu Scramble
Scramble Seasoning Mix: Make a big batch of this spice mix and keep in your cupboard for months.
2 and 2/3 cups nutritional yeast
2 Tablespoon onion powder
2 Tablespoon paprika
1 teaspoon celery seed
1 Tablespoon turmeric
3 Tablespoon salt
1 teaspoon pepper
Mix spices and store in a sealed container. Keeps indefinitely.
Instructions
Smash 1 block of Mori-Nu silken tofu and 1 block of fresh, firm tofu with a potato masher or your (freshly washed) hands. Mix 4 tablespoons of scramble seasoning mix with the tofu mixture. Add a tablespoon of oil to a non-stick pan. Sauté tofu mixture on medium heat for about 10 minutes with your favorite veggies. We like bell peppers, shredded carrots, spinach and mushrooms. If the tofu starts sticking or getting dry, add a little water.
Serve with toast, home fries, heart-healthy Fakin’ Bacon and of course, lots of coffee with Silk soy creamer. Taste before serving—some people prefer a stronger seasoning, if so, just add an extra tablespoon.
For the photo here we added home fries, Yves vegan breakfast sausage patties, and whole-grain toast with Earth Balance and marmalade. Yum!
