Spinach-Walnut-PestoBy Lisa Botts, Good Fuel Galore

A little pesto goes a long way. This spinach/walnut version from Good Fuel Galore is a mild take on the classic basil/pine nut. It’s perfect with pasta, potatoes and panini. Make a batch to refrigerate for the week and add it anywhere you want a balance of bright, earthy flavor. Shake it up with your favorite olive oil and add it to a roasted beet and baby greens salad.


Heaping handful of spinach

1/3 cup walnuts

1/3 cup olive oil (add more for a thinner consistency)

3 cloves garlic

1 tbsp. nutritional yeast flakes

salt to taste


Place all ingredients in food processor and blend until smooth. Toss with your favorite pasta, serve over potatoes, or on panini.
